T-1 kitchen knife sharpener

Sharpener is easy too set up and use. My only fault is that I can’t sharpen some of my knives for the full length of the blade. The problem being that the bolster on some are thicker and extend over the end of the blade. I definitely recommend for most of the kitchen knives that people are likely to have.

nice for kitchen knives

This works great for kitchen knives but if the base of the blade has a concave radius there is no way to do this that I can see. Also, I was disappointed that The device would not allow be to service my good Buck hunting knife....that is why I really bought this device. the body of the hunting knife is tapered and thicker than most kitchen knives, so I am not able to put it at the correct angle and the finger stop at the base of the knife hits the nut that holds on the diamond wheel. Other than this the fit and finish is very nice quality.

The Tormek T-1 Kitchen Knife Sharpener is specifically designed to provide excellent sharpening results for kitchen knives. We’re happy to hear that some users have also tried sharpening their hunting knives with the Tormek T-1 and achieved good results!
That said, since hunting knives can come in a wide variety of shapes and designs, the Tormek T-1 is not specifically designed for this purpose.

Easy to use, works great

We had a ton of old knives that had never been sharpened that we had accumulated over 40+ years of being married. I had never sharpened a knife before. Watched the demonstration video and proceeded to sharpen and hone 27 old knives. It was easy and they turned out great. Very sharp now! We bought the sharpener because we invested in a nice Lamson knife set and wanted them for the new knives but it feels like all the old ones are new again! Highly recommend.

Tormek T-1

I used this on my Japanese kitchen knives (9 of them). The sharpener did a decent job but I could not get the knives as sharp as they were from the manufacturer. I also had a shipping snafu, purchasing from Tormek US. I did get some great communication from customer support but it took longer than I expected it to take and for several days no one could find it. I believe I will get rid of the T-1 and get a T-4 because of its options and accessories. I would potentially keep the T-1 if I could get a finer grit wheel, but as it is I don't think it will meet my needs.

Thank you for your answer. Japanese knives are often quite hard steel. As the diamond wheel is fine graded (600 grit) the steel removal is not that big. So sharpening those kind of knives takes a bit longer.
We have not planned to launch diamond wheels in different grits for the Tormek T-1. But we do offer them for the Tormek T-2 Pro Kitchen Knife Sharpener.
A Tormek T-4 on the other hand gives you, with the right jigs, the possibility to sharpen nearly all edge tools.

Exceeded expectations

While it’s definitely not inexpensive at $371 USD, Tormek’s T-1, is a very solid, heavy-weight (not overly so at 8 or 9 lbs). But compared to other electric sharpeners, I’ve owned costing in the $120-170 range; and manual pull thru slots sharpener’s— the Tormek is WAY more effective & is precision machinery.

Right out of the box, I sharpened 3 very dull 3” - 4” german stainless steel paring knives to near razor sharp; also a 6” knife. Impressive performance.

This was the first time using the Tormek T-1… it’s easy to use, but like most things requiring skill & dexterity “practice makes perfect.” In future my technique will improve and I won’t put scratches or other blemish to a blade. That noted, functionally, my recently sharpened knives finally cut the way they were supposed to.

Sharpening scissors is trickier and unless they come apart, you won’t be able to sharpen their full length. Real small pocket knife blades are also not able to be sharpened well (I tried, but they are too short/thin-width to fit the Tormek’s guide slot. (Perhaps Tormek can proved a smaller plastic guide piece to fit pocket knives less than 3”…?).

Before buying (and using the Tormek) I viewed several videos—theirs, as well as supplier reviews. These were helpful and helped persuade me to spend more than double what I was planning to for a Chef’s Choice, electric sharpener (similar to what I owned a long time ago). Wirecutter NYT, rated the C C highly— but they did Not test the Tormek T-1 (or didn’t write about it, if they did).

Since I’ve owned one of those, I can tell you there’s no comparison—one is mostly plastic, weighing 2 lbs or so, C C (case, thin sheet metal, with slots for coarse & finish). Tormek’s is 8 lbs or so, cast metal, with a generous sized 600# diamond wheel and a hard rubber-composition “honing wheel”. It looks and feels like a ‘real solid tool’, something you’d expect to find in a pro kitchen. And this is the home model. Tormek make a professional model (at substantial higher cost, for frequent use in restaurants or food prep). You nor I don’t need that. The home cook will be happy with the standard model.

I became curious and looked at Tormek’s other products and discovered they make industrial level and professional knife sharpening as well as wood work oriented machines. Interesting.

NOTE: I almost never provide reviews for things— in fact this Tormek sharpener and a very solid shoe stretcher are the only product reviews in memory. BUT when a product really is “as advertised” and/or Better than expected— I make an exception.

Perfection in Three Easy Steps

It takes only three easy steps to sharpen your knives razorblade sharp. With the Tormek T-1 Kitchen Knife Sharpener you sharpen the entire bevel of your knife creating a new apex. At home, in your own kitchen!

1. Set preferred edge angle

17° is a good angle to start with if you are unsure of what angle to choose. A small angle will cut more easily, while a large angle will give a stronger edge.

2. Sharpen both sides

Insert the knife into the guide. Follow the edge profile and apply gentle pressure, as if you were slicing a tomato.

3. Hone to final finish

Remove the burr and polish the knife on the honing wheel to achieve a razor-sharp edge. Also for maintaining your knives between sharpenings.
